Erich Hartmann for shear numbers.
Gerd Barkhorn
Erich Ruddorfer
Heinz Schnaufer (NJG)
Martin Becker (NJG)

and finally Willi Reschke, only 26 victories but 18 were 4 engined bombers, out of just over 60 operational flights. Quite impressive in late 44/early45

I gotta go with Joe Foss and Marion Carl, both achieved their records in an inferior aircraft (F4F Wildcat) under very adverse conditions.
