I'll second August's vote for "The Great Waldo Pepper": an offbeat subject, and I think they utterly nailed the "feel" of it.

Am also very fond of "Always": a complete flight of fancy, but one of those well-rethought remakes that betters the original...again IMO!

Like "Strategic Air Command" and "Thirty Seconds Over Tokyo" also; and from a flying-pic standpoint, "Battle Of Britain" and "Tora! Tora! Tora!". From the latter standpoint two TV series also stand out: BBC's "Wings" (RFC recon pilots in 1915-16) and LWT's "Piece Of Cake" (Ray Hanna and friends in Spits...episode one especially featuring some of the finest Spit footage ever shot).
