Any guesses on the total number of airworthy and currently flying P-51 Mustangs?

I'll say 147

I'm not sure if this is current as of today, but MustangsMustangs.com "The List" currently displays as follows:

P-51 Mustang Survivors (280)
Flying (152) Display (57) Restoration (44) Storage (22) Unknown (5)
