I am working on a personal project to find all the display aircraft (mainly the UH-1, but others as well) and write about the history of each aircraft. Does anyone know any resources I might use to look up the serial numbers of the aircraft to find out about their service? Any assistance would be much appreciated. Thank you

Try the Vietnam Helicopter Pilots Association. They have a database on all helos that served in Vietnam.

I have a list complete with military serial numbers of almost 200 UH-1's on display in the U.S. Send me a PM, I'll send you the list. It also includes AH-1's in close to the same number, and a few other helos.
