I've been going to a half dozen museums or so the last couple years. I try to spend at least $50 bucks per visit. This helps the museum out. My #1 item is a white, collared polo/golf shirt with the museum logo. 2) Books , autobiographies signed by the veteran or at least the author. 3) Hoodies or other clothees for the wife and kids. 4) Patches.
As far as models, the authentic , small scale, already completed seem to be the most popular. Apache helicopters, F-16s but something that is what they fly at the nearest air base. Another item that would do well is travel mugs and travel water bottles with the museums logo or aircraft on it. Soccer moms and grisly old vets both like to take a drink with them in the car.

Similar to what some have mentioned, I go for the polo shirts with the museum logo as my office is business casual and they fit the bill.
